Cucumbers and Yogurt Appetizer (Tzatziki)
Skin the cucumbers and cut into thin strips with a vegetable grater, and then you need to cut them into very small pieces. Drain and squeeze well and add the salt. Add the crushed garlic, a small amount of vinegar—like a 1/4 teaspoon. Add the yogurt and mix well, finally add the oil. Add this only add a very small amount. Serve with good Greek Bread. This is wonderful.
