The ingredients needed to cook Easy Enchiladas:

  1. You need 1 1/2 lb of ground meat.
  2. Provide 1/2 can of tomato sauce.
  3. Take 1/2 cup of fresh chopped cilantro.
  4. Get 1 of fresh squeezed lime.
  5. Take 1 pinch of salt.
  6. Take 1 pinch of pepper.
  7. Take 3/4 cup of finely chopped onion.
  8. Take 8 small of floor tortillas.
  9. Take 2 1/2 cup of Mexican cheese.

Instructions to make Easy Enchiladas:

  1. brown ground meat, 1/2 of chopped onion, 1/2 of cilantro, 1/2 lime juice, salt and pepper.
  2. place meat in tortilla shell and sprinkle a little cheese, then wrap and spray light coat of non stick cooking spray, place in a 13in. X 9in. baking pan.
  3. repeat step two until all tortilla shells are done.
  4. pour half can of tomato sauce, sprinkle cilantro, and onion.
  5. bake in oven for 20 minutes.
  6. remove from oven and cover with desired amount of cheese.
  7. bake for additional 5 minutes or until cheese its melted.
  8. remove from oven let stand for 2 minutes and serve.
