The ingredients needed to make Tom's Tiramisu:

  1. You need 250 grams of mascarpone.
  2. Take 40 grams of sugar.
  3. Use 2 large of eggs.
  4. You need 250 ml of strong espresso.
  5. Prepare 100 ml of marsala wine.
  6. Prepare 100 ml of whipping cream.
  7. Take 150 grams of savoiardi or spongefingers.

  1. make the espresso and add the marsala, let cool until needed..
  2. split the eggs..
  3. mix sugar and egg yolks with mixer until light yellow..
  4. mix in the mascarpone until smooth..
  5. whip the whipping cream until stiff peaks form, then fold into mascarpone mixture..
  6. whip the egg whites until stiff peaks form and fold into mascarpone mixture..
  7. put the sponge fingers or savoiardi in the espresso mixture and make a layer in a dish..
  8. put half of the mascarpone mixture on top of the drenched sponge fingers..
  9. add another layer of espresso drenched sponge fingers on top..
  10. put the remaining mascarpone mixture on top. and garnish with cocoa powder..
  11. enjoy :).
